April showers bring May flowers. What do May flowers bring? Pilgrims!
I can already hear my kiddos groaning at that cheesy joke. As a mom, it is my job to dole out the cheesy jokes though.
The days are getting longer (yay!), the sun is getting warmer (yay!), and with May in full force, it means school will soon be out for the summer. Yay! I wish summers meant total and utter relaxation, but our schedules are still go-go-go, and I am sure yours are too. Even though my summers are busy, I want to make them feel extra special for my kiddos so they have good memories when they reflect on their childhood.
I would say popsicles for breakfast stand a good chance to be remembered. I don’t know about your children but my kiddos could eat popsicles all day every day, especially in the summer. When I asked them if they wanted popsicles for breakfast their eyes nearly popped out of their head. They looked at me like it was a trick question.
Hold up though… these aren’t just any popsicles. Of course, I had to mom them up a bit, so it was kind of a trick question. They are Greek yogurt popsicles with fresh fruit puree. Shhh, please don’t break the news to my kiddos that they aren’t filled with extra sugars and unnecessary dyes.
Parents, guardians, and grandparents, you can feel good about feeding these popsicles to the youngins. Get them involved by letting them pick out their favorite yogurt flavors and fruits to mix and match. I foresee a summer filled with *breakfast popsicles on the deck. I. CANT. WAIT!
Note: if you don’t have popsicle molds you can use small paper cups and popsicle sticks.
*these popsicles will be delicious any time of day not just for breakfast
Greek Yogurt Popsicles
serves: 6
Ingredients
- 1 cup Greek yogurt (I used plain and added 1 tablespoon vanilla extract)
- ¼ cup milk, to thin yogurt
- 6 ounces raspberries (or your favorite fruit)
- 1 tablespoon sugar
Directions
- Mix together yogurt and milk to thin the yogurt. In a small bowl sprinkle the sugar over the raspberries. Allow to sit for 5 minutes. Mash berries into a chunky puree.
- Scoop a small amount of yogurt into the bottom of the popsicle mold, add a small amount of berries, repeat the process until the mold is full, ending with yogurt.
- Place molds in freezer and allow to freeze until solid, about 6 hours or overnight.
